滷肉飯Taiwanese pork mince rice

陣陣的醬油香氣傳來

是熟悉的回憶,和記憶中跟在媽媽身後一起煮菜的童年時光

儘管味道不全然相同,儘管材料都是非台灣味的超市

但還是成功複製出家鄉味,這一道我最喜歡的料理之一

“ 滷肉飯 ”

The taste of the memories , the memory from my childhood ,

When I was a kid , I always stick behind my mom and messing around try to help cooking .

Even though here is not my hometown and the supermarket is not from Taiwan , we cant buy all the same material,

but we still can copy the one of our traditional and my favor dishes !

“ Taiwanese pork mince rice ”

台灣滷肉飯

準備材料:

  1. 冰糖少許 約30克
  2. 蒜3-5瓣,切成蒜末
  3. 豬絞肉500克
  4. 醬油約150-200毫升
  5. 花生醬 約30克

Taiwanese pork mince rice

  1. Prepare:
  2. icing sugar (or another sugar should be fine) 30g
  3. 3 -5 garlic cloves, chopped
  4. Pork mince 500g
  5. Soy sauce about 150-200ml
  6.  Peanut butter 30g

作法:

  1. 冰糖與熱開水混合加熱,煮及拌至糖融化並呈現焦糖色,呈碗 – (A)
     
  2. 油、蒜末、( 油蔥酥 )以中火爆香,另外呈碗 – ( B )
     
  3. 油、豬絞肉 以中火炒至快熟時,加上上述兩碗 (A+B) 備料並加上花生醬拌炒至肉全熟 – ( C )
     
  4. 將第3步驟C移入鍋中,倒入醬油,熱開水至蓋過所有料品,並添加鹽和胡椒調味,並以小火加蓋滷
     
  5. 可將水煮蛋和大白菜放入滷汁一起滷,約30分鐘後檢查鍋內是否有浮油
     
  6. 再持續滷,總共約50-60分鐘

最後將滷汁緩緩淋在飯上,撒上蔥花,享受吧  Feast!

Method:

  1. Icing sugar and hot boiled water to mix with low fire until water color shows brown, then place a bowl – (A)
     
  2. Heat the Oil and add crushed garlic with medium fire until fragrant, place another bowl – ( B ).
     
  3. Cook pork mince with heated oil in medium fire until mince half-cooking, quickly add bowls A +B that we described above . As the cooked mince ready, place in a big pot.
     
  4. Add soy sauce and hot boiled water to cover all material , some pepper and salt to flavor, cover a pot lid with low fire.
     
  5. Absolutely you can add boiled eggs and cabbage in that pot. After 30 minutes, check the pot if it has floating oil then take oil out.
     
  6. Keep stewing totally about 50-60 minutes.


Now fragrant and delicious Taiwanese pork mince rice sauce is done! Dressing the sauce and some cut spring onion on the top of hot rice. Here are Taiwanese hometown flavor!
